General Meat Processing Information

Our 4800+ sqft custom meat processing plant is operated under the name of Jeff Scavazzo's Deer Processing.

While the plant is at it's busiest during the fall big game seasons, demand for our quality products has us open throughout the year. Deer processing remains our specialty, however we also process bear, elk, fish, and other exotic animals brought in by our loyal customers who often return several times per year for us to create specialty products for them.

It all begins with a personal reception at our receiving doors where each individual animal is tagged. We clearly understand the importance of giving hunters back their own meat! Once tagged, each animal is immediately skinned, hung, washed and cooled which ensures a fresh tasting, quality product. Hunters or small meat processors relying on mother nature to provide adequate cooling at significant risk for spoilage or degradation of the meat quality. Once appropriately cooled, the meat heads to our processing areas. In fact cooling is so important, we are open to 9pm during archery season and 7pm during gun season. (Long after our competitors are gone for the day!)

Jeff Scavazzo's Deer Processing can professionally cut, vacuum pack and freeze your deer or large game for the trip home. Steaks, Roasts, Chops, Tenderloins, Cubed Meat, Minute Steaks, and ground meat - we can do it all. Each order is custom cut and packaged to order. We also have offer our customers the option to smoke their meat creating products such as: Kielbasa, Slim Jims, Pepperoni, Summer Sausage, Jerky, Salami and more.

** We do not vacuum pack any of our specialty sausages. **

While we believe our virtual tour of our meat processing plant clearly shows we are very different from the many self promoting processors working out of a garage, our customers are encouraged to come and see the operation. We pride ourselves on having a very professional, clean working environment.

Jeff Scavazzo's Deer Processing is proud to participate in the Hunters Sharing the Harvest Program. (We are currently the ONLY participating butcher in Susquehanna County!) This program is Pennsylvania’s  charitable venison donation program for hunters who share their extra venison via a statewide network of participating butchers to Food Banks across Pennsylvania.
